We are actively recruiting a Beverage Director for Kalahari Round Rock, Texas who is ready to hit the ground running, make an impact, and help take the Beverage division to the next level! Beverage Manager Job Description Department: Food and Beverage Reports To: Food and Beverage Director Status: Exempt JOB SUMMARY The Beverage Director is accountable for the achievement of beverage sales volume, operating profit objectives, staff training goals, product consistency and guest satisfaction. The main function of this role is to assess, develop and implement beverage ideas and concepts, and to increase sales efficiency and profitability, while improving processes methodology and guest satisfaction. In addition to the broad responsibilities listed above, the Beverage Director will drive all beverage sales (with the primary focus being bar and alcohol sales in all dining, entertainment, waterpark, theme park, bar, and banquets venues) in the organization. He/She must direct all beverage operations in the areas of excellence and efficiency to achieve revenue and expense targets. The Beverage Director will work closely with the Resort as well as Corporate beverage teams in development, execution, training, and consistency of beverage programs. The Beverage Director may occasionally need to assume the responsibilities of their subordinates including but not limited to Manager, Supervisor, Bartender, Server, and Barback. The Beverage Director will facilitate an environment of best practice sharing and communication with all F&B Management, Associates, and its partners. QUALIFICATION STANDARDS EDUCATION REQUIREMENTS: Bachelor's degree in Food Science, Nutrition, Culinary Arts, or Hotel/Restaurant Management is preferred. LICENSE/PERMITS REQUIRED: Valid driver's license required and must be least 21 years of age. State or Local Law may require a certificate upon completion of an alcohol awareness/safety class as well as state-certified proper food handling certification. REQUIRED SKILLS: Must be able to communicate, read, write, and speak English effectively. Bi-lingual skills are preferred but not required. Ability to calculate figures amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume. Ability to apply concepts of basic math, algebra and geometry. Extensive knowledge of wine, spirits, fine dining, concessions, and culinary a must both in service skills and preparation of food and beverage in a variety of venues. Good verbal communication and interpersonal skills are a must. Ability to present information in one-on-one, small group situations to customers, clients, national and local vendors, associates and corporate executives of the Resort a must. Ability to translate corporate direction into field activity. KNOWLEDGE OF COMPUTER HARDWARE OR SOFTWARE: Ability to operate a cash register, Micros terminal, Phone system, beverage dispenser, Berg Liquor Gun System, POS system, ADP, NetVuPoint, Groupwise, and other types of restaurant and kitchen equipment in the food and beverage industry preferred. Computer skills such as Word and Excel are required. Strong computer skills, particularly in relation to analyzing sales data are helpful. PREVIOUS EXPERIENCE REQUIRED: Minimum 3+ years Beverage Management experience and/or Food Service experience required; preferably in a large hotel (over 500 rooms) or successful chain/brand of food and beverage establishments, i.e., restaurants, bars, and entertainment venues. ESSENTIAL DUTIES & FUNCTIONS: Assist in the development and implementation of core beverage standards and beverage sales strategies for Kalahari Resorts and Owner's companies. Develop property-wide drink menus, seasonal featured drinks and specials, and spec new glassware for bars. Implement beverage training materials and schedules. Partner with targeted operations to ensure excellence in the area of beverage management. Ensure that all beverage partnerships are executed and developed and that Kalahari Resorts is receiving and utilizing all partnerships to the maximum potential. Partner with beverage vendors to design and implement resort-wide programs. Identify training opportunities and partner with resources to design, implement and facilitate necessary training related to beverage management. Partner with Food & Beverage Directors, Director of Culinary, and Executive Chefs, Department Heads and Associates to drive sales. Design, prepare and conduct Beverage reviews at the Resorts and other venues to discover beverage opportunities. Collaborate with F&B teams to assess, improve and implement the beverage sales strategy for their operations. Develop strong collaborative relationships with key members of all departments in order to exceed beverage sales goals. Meet the company's financial F&B targets as stipulated in the annual budget. Ensure delivery of F&B revenue growth and margin enhancement throughout each Resort venue. Assist Corporate and/or Food and Beverage teams on special projects throughout the year. Support F&B technology that enhances Resort and venue performance. Ensure the execution of "Living the Kalahari Promise" with Service Expectations and Core Values at all operating units. Assume responsibility for delivering effective service "beyond expectations" throughout the Kalahari Resort venues. Mentor, train and develop Culinary, Food and Beverage Directors and Resort Service Directors as it relates to Beverage Sales. Accumulate, share and effectively implement "Best Practices" as developed and proposed by subject matter experts within the company. Understand completely all policies, procedures, standards, specifications, guidelines and training programs for all food and beverage outlets within the Resorts and Owner properties. Ensure that all guests feel welcome and are given responsive, friendly, and courteous service at all times. Ensure that all beverage and related products are consistently prepared and served according to the venue's recipes, portioning, pouring, cooking, packaging, and serving standards. Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner. Be knowledgeable of restaurant/venue policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures. Fully understand and comply with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements of the restaurants, food and beverage outlets/venues, associates and guests. Develop, implement, and monitor programs that ensure a safe, clean facility and work environment that is in compliance with all appropriate regulations - OSHA, Ergonomics, Emergency Response, Injury and Illness Prevention, Food & Beverage Handling, and Hazard Communications, schedules, and direction for managers, supervisors, and associates. Ensure that all staff is following and practicing all laws pertaining to Alcohol Sales and Guest Safety. Report all concerns and problems to the Owner, COO, General Manager, Food and Beverage, Culinary Directors when appropriate.
